Recipe: Quinoa and Shrimp Stir Fry

Preparing healthy meals can be a huge drag sometimes but the pay off is huge. For this reason I try to stick to posting nutrient rich recipes that are as easy to make as possible. This Quinoa and Shrimp Stir Fry took me about 20 minutes to cook. One big reason for that is because I try to prepare and freeze ingredients once a week so that I can just thaw them out and cook them when hunger strikes. The quinoa I used in this recipe takes the longest to prepare, luckily a week ago I made a huge pot of quinoa and divided it into 5 ziplock bags and froze them. I thawed out one of these bags in the morning and made a quick dinner for my friend Rosalva and I.

Ingredients:

8 Asparagus Spears

1 Large Cucumber

1 Large Avocado

3 Tsp of Cayenne Pepper

¼ Red Onion

1 cup of Shrimp

2 Tbsp Olive Oil

 

If you have not prepared your quinoa in advance do that first. While it is cooking slice the onions and dice the cucumber and avocado. If you have prepared the  quinoa in advance, start by preparing the onions, cucumber and avocado. Steam the asparagus spears. While they are steaming grill the onions on low heat using olive oil. After about 10 minutes, add 2 cups the shrimp and Quinoa. Cook on low heat for 10 minutes stirring occasionally. Remove stir-fry and asparagus spears from heat. Mix the cucumber and avocado together and throw the cayenne pepper on top of the mix. and some on the stir-fry. Done!
