Hey ladies and gents! I wanted to share a healthier, vegetarian alternative to a simple and delicious breakfast sandwich I am personally fond of making and eating. While away at school, I perfected the egg sandwich with ingredients I had on hand and now that living with Elkee has opened up my pallet to vegetarian/vegan options, we decided to bring both worlds together. Normally I would use turkey or ham slices in addition to the eggs but a nice substitute is a veggie patty, which is what we used. This is an awesome recipe that clocks in at just under 530 calories and if you worry that that may be a bit too high for breakfast, always remember that you will burn it off throughout the day. - 1 Large Egg (70-78)
- 1 slice Pepper Jack Cheese (80)
- 2 slice Roma Tomatoes (10-15)
- Morning Star Farms Garden Veggie Patty (110)
- 2 slices Ezekiel Bread – (160)
- 1 tbsp mayo your choice we used Best Foods Creamy Balsamic (50)
- 1 cup kale (33)
- 2 ¼ second sprays of Pam Cooking Oil (0)
Firstly, fry your egg. Then cook up your veggie patty. Now the rest is mainly just assembly. Toast your Ezekiel bread, and layer in some of the balsamic mayo (regular mayo works too). Next, Layer on the veggie patty, fried egg, and pepper jack cheese (any other kind of cheese would work too). Lastly, add your kale, tomatoes and sandwich with other half of bread and voila!
